Pink Rose Bridal Shower Cupcakes

Ingredients
Red gel-paste food coloring
Pastry nail
Pastry bag
Plain coupler
Small petal tip
Yellow Butter Cupcakes



Directions
  1. Starting with 1 drop at a time, add gel-paste food coloring to buttercream. Stir well to combine. Add more food coloring, stirring constantly, until desired color is reached. Dab buttercream on top of pastry nail, and press a 2-inch square of parchment on top. Reserve half the buttercream for frosting tops of cupcakes. Fit pastry bag with coupler, and fill with remaining buttercream. Place tip of coupler in center of parchment square, squeeze pastry bag gently, and pull up slowly to make an acorn-shaped mound (this is the bud).
  2. Fit pastry bag with petal tip. (You can anchor the nail in Styrofoam or a potato with a flat-cut bottom.) Hold tip against the point of the bud, wide end down and narrow end angled in toward center. While turning the nail slowly, pipe a wide, tight strip, enrobing the top of the bud. Turning the nail as you go, pipe 2 arched petals that each reach around half of the bud. Continue turning the nail and piping, making longer, overlapping petals and angling further outward as you go, until you reach the bottom of the rose. Gently slide parchment with rose onto a baking sheet, and refrigerate until firm, at least 20 minutes (or up to 2 days). Repeat to make more roses.
  3. Frost tops of cupcakes with buttercream. Using a small offset spatula, gently place a rose on top of each cupcake, discarding parchment

Pineapple Cupcakes


Ingredients:
* 1 cup flour
* 1 cup sugar
* 1 tsp baking soda
* 3 egg whites
* 3/4 tsp vanilla
* 10 ounces crushed pineapple
* 3 tbsp powdered sugar



Directions:
First, you need to get a large mixing bowl and combine the sugar, flour and baking soda. Next, beat in the egg whites, the vanilla and pineapple. You can use an electric mixer, or stir by hand and give your arms a workout, but it needs to be mixed well. Pour the batter into a lined muffin tin and bake at 350 degrees Fahrenheit (176.6 degrees Celsius) for about 25 minutes. You can poke a toothpick into the cupcakes to see if they’re done. If the toothpick comes out clean, they’re ready to leave the oven and cool for five minutes. The final step is to avoid the icing and sprinkle them with your powdered sugar instead.
This recipe is a great example of how you can make a delicious treat such as a cupcake into a healthy treat rather than a cupcake filled with millions of calories. In this recipe we use pineapple a very sweet fruit and this helps replace the sugar that is added and just with that being replaced it makes a great difference. Chocolate Chip Cookie Dough Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup miniature semisweet chocolate chips
  •  
  • 1 (18.25 ounce) box yellow cake mix
  • 1 1/3 cups water
  • 1/3 cup canola oil
  • 3 eggs

Directions

  1. Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine. Form the dough into tablespoon-sized balls; place onto a baking sheet, and freeze until solid, about 2 hours.
  2. Preheat an oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  3. Beat 3 eggs in a large bowl with an electric mixer to break up. Add the cake mix, water, and canola oil; continue beating for 2 minutes on medium speed. Spoon into the prepared cupcake liners, filling each 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.
  4. Bake in the preheated oven until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Its important to know whether you are going to enjoy to make these cupcakes and will eat them because although it might not take so much time or money it can change your perspective on cupcakes. Its good to try new things but you shouldn't try something you know you wont like just by looking at the ingredients. There are a ton of different cupcake recipes to look at therefore find one you are passionate for and make them for your friends and family or simply for yourself.

Sweetheart Cupcakes


Ingredients

  • 1 (18.25 ounce) package white cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 egg whites
  • 8 drops red food coloring
  • 2 drops raspberry candy oil

 

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a standard muffin tin with paper cupcake liners.
  2. Beat the cake mix, water, vegetable oil, and egg whites together on low speed for 30 seconds, then on medium for 2 minutes, until smooth. Fill cupcake liners 1/3 full with white batter; set aside.
  3. Stir 4 drops of red food coloring into the remaining bowl of batter to make the batter pink, stir in the raspberry oil. Pour 1/3 of pink batter into a resealable plastic bag and set aside.
  4. Mix more food coloring into the remaining bowl of pink batter until it is an orange/red color and pour the batter into a resealable plastic bag. Cut a corner off the bag, stick the open tip into the center of each cup of white batter and squeeze in about two tablespoons of red batter.
  5. Cut the corner off the bag with the pink batter, stick the open tip into the center of the red batter and squeeze about 1 tablespoon pink batter into each cup.
  6. Bake the layered cupcakes in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool completely before frosting.

Apple Banana Cupcakes

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup shortening
  • 1 1/4 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk
  • 1 cup ripe bananas, mashed
  • 2 apples - peeled, cored and shredded

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour 24 muffin cups, or use paper liners. Sift together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  2. In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and buttermilk. Beat in the flour mixture, mixing just until incorporated. Fold in the mashed bananas and shredded apples. Fill each muffin cup half full.
  3. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.

Chocolate Candy Cane Cupcakes

Ingredients:
  • 5 (1 ounce) squares BAKER'S Semi-Sweet Chocolate, divided
  • 1 (18.25 ounce) package (2 layer size) chocolate cake mix
  • 1 (3.9 ounce) package JELL-O Chocolate Instant Pudding
  • 4 eggs
  • 1 cup BREAKSTONE'S Sour Cream
  • 1/2 cup oil
  • 1/2 cup water
  • 6 small candy canes, crushed, divided
  • 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed

Directions

  1. Heat oven to 350 degrees F. Chop 4 chocolate squares; set aside. Beat cake mix, pudding mix, eggs, sour cream, oil and water with mixer on low speed until moistened. Beat on medium speed 2 min. Stir in chopped chocolate and 2 Tbsp. candy. Spoon into 30 paper-lined 2-1/2-inch muffin cups.
  2. Bake 20 to 23 min. or until toothpick inserted in centers comes out clean. Cool completely.
  3. Frost cupcakes with COOL WHIP. Melt remaining chocolate; drizzle over cupcakes. Top with remaining candy.
These cupcakes are not too common but from the people that make them they all seem to enjoy them. These would be great cupcakes to make especially on the occasion of christmas because they involve candy canes and those are the candies that we use for decoration during christmas. Be creative and use random things to makes cupcakes fun!

Chocolate Cream Cheese Cupcakes

For the cupcakes:
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 oz cream cheese
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • generous 1/3 cup potato flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon milk
Preheat the oven to 350 C. In a bowl, stir together the butter and cocoa powder, then stir in the sugar.  Add the cream cheese and beat in.  Beat in the egg, then stir in the vanilla extract.  Add the flour, baking powder, and baking soda and stir together.  Stir in the milk. Spoon the mixture into the paper liners and bake in the preheated oven for about 16 minutes until risen and a skewer inserted in the center comes out clean.  Transfer to a wire rack to cool.

To Decorate
  • 1 oz bittersweet chocolate, plus extra to decorate
  • 5 oz cream cheese
  • 1/3 cup confectioners sugar, sifted
  • 1/4 teaspoon pure vanilla extract
To decorate, put the chocolate in a heatproof bowl set over a pan of gently simmering water.  Do not let the bowl touch the water.  Leave until almost melted.  Remove from the heat and let cool for about 10 minutes. Beat together the melted chocolate, cream cheese, sugar and vanilla extract until creamy, then spread the frosting on top of the cupcakes.  Using a vegetable peeler, make chocolate shavings and scatter on top of the cupcakes.

Spanish Orange Syrup Cupcakes

For the cupcakes:
  • 2 medium, seedless sweet oranges, peeled and roughly chopped
  • 1/2 cup (1 stick) sweet butter
  • 1 cup superfine sugar
  • 2 eggs
  • 1/2 cup semolina
  • 1/2 cup almond meal
  • 1/2 cup self-rising flour
For the syrup
  • 1 peeled orange rind, from cupcake recipe
  • 1/2 cup superfine sugar
  • 1 cup water
Instructions:

Preheat the oven to 325F (160C).  Place 12 paper baking cups in a muffin pan.  In a saucepan, cover the oranges with water.  Simmer until tender about 15 minutes.  Cool.  Drain the oranges and puree in a food processor.  In a bowl, beat the butter and sugar with an electric mixer until light.  Slowly beat in the eggs.  Stir in the rest of the ingredients, along with the orange puree, until well combined.  Spoon the mixture into the cups.  Bake for 35 minutes.  Remove pan from the oven and cool.
To make syrup, thinly slice the orange rind, removing the pith.  Cut the orange rind into thin strips.  In a pan, bring the sugar and water to a simmer, stirring to dissolve the sugar.  Add the orange strips and boil uncovered for 5 minutes, or until tender.  Spoon the syrup onto each cupcake.  Store in an airtight container for up to 2 days.

This is something unique to the Spanish ways of making a cupcake. yes, its really sweet because of the syrup but the orange gives it a unique flavor. enjoy eating alone or even with milk as a party dessert. Don't be shy to try something new every once in a while, you never know if you will like it or not.

Raspberry Trifle Cupcake

Ingredients:
1 stick unsalted butter, at room temperature
1/2 cup granulated sugar
2 eggs
1 cup self-rising flour
1 1/3 cups raspberries, halved



Preheat the oven to 350F.
Beat the butter and sugar together in a bowl until pale and fluffy, then beat in the eggs, one at a time.  Sift the flour into the mixture and fold in, then fold in the raspberries.
Spoon the mixture into the paper liners and bake in the preheated oven for 18 minutes until risen and golden and a skewer inserted in the center come out clean.  Transfer to a wire rack to cool.

To decorate
  • 1 tablespoon kirsch
  • 1/4 cup heavy cream
  • 1/2 cup fresh custard sauce
  • 7 oz raspberries and red currants, or other seasonal berries of your choice
To decorate, prick each cupcake all over with a skewer and pour 1/4 teaspoon kirsch over each one, allowing it to soak into the cupcake.  Whip the cream, then fold in the custard sauce and spoon on top of the cupcakes.  Top each cupcake with raspberries and red currants, or seasonal berries of your choice

Classic Carrot Cupcake with Orange Cream Cheese Frosting

Ingredients
  • 1 (9 ounce) pkg frozen sliced carrots
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs, beaten
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1/2 cup pecans or walnuts
Directions:
Preheat oven to 350 degrees.  Cook carrots according to pkg directions until tender.  Drain & mash in a large bowl.  Add sugar, oil & eggs, beat well.  Mix flour, baking soda, cinnamon & salt.  Beat into carrot mixture.  Stir in chopped nuts.  Pour batter into cupcake pan lined with baking cups.  Bake 20 minutes or until a toothpick inserted comes out clean.  Cool and frost.
Ingredients for Frosting
  • 1 pkg (8 ounces) cream cheese, at room temperature
  • 8 tbsp (1 stick) butter, at room temperature
  • 3 cups confectioners sugar, sifted
  • 2 tbsp fresh orange juice
  • 1 tbsp grated orange zest (from 1 orange)
Frosting Directions:
Blend cream cheese & butter in a large mixing bowl on low speed until combined.  Stop the machine & gradually add the sugar, blending with the mixer on low speed until the sugar is well combined.  Then add the orange juice & zest to the mixture.  Increase the mixer speed until the frosting lightens & is fluffy, about 1 minute.  Use at once to frost your cupcakes.
Makes approx. 23 cupcakes.

If you are a carrot lover then you will most likely enjoy this recipe with a passion. Also if you enjoy cheesecakes then this will be a great way to enjoy. And if you dont like frosting then its not necessary to put it but its waaaay better with frosting. Choc Honeycomb Cupcakes

For The Cupcakes…
  • 5 ½ ounces cake flour
  • 5 ½ ounces super fine sugar
  • 6 ounces unsalted butter softened
  • 3 large lightly beaten eggs
  • ½ teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 2 tablespoons dutched cocoa powder
For The Honeycomb Filling…
  • 5 ounces semi sweet chocolate
  • ¼ cup heavy cream
  • 1 teaspoon honeycomb flavoring


For The Honeycomb Topping…
  • 2 ounces melting chocolate
  • 1 packet of honeycomb

Method:

Preheat your oven to 350° F (180° C) and prepare 12 paper cupcake cases in muffin tins.

Place softened butter and sugar into a bowl and cream with an electric mixer until the butter changes
colour. (generally 2 minutes)
Add in lightly beaten eggs to the mix a little at a time, beating on slow for 15 seconds between each
addition. Add Vanilla then sift in flour and baking powder and cocoa and mix for a further minute.
Spoon batter into cases until they are approx 2/3rds full and then place in the middle rack in your preheated
oven.

Bake for approx 18 to 20 minutes or until a toothpick comes out clean, then remove and let sit for a few
minutes before removing the cupcakes from the tins and placing them on a wire rack to cool.
Melt the semi sweet chocolate over a double boiler until almost melted, heat cream in a saucepan until it just
starts to boil, then pour over chocolate and mix until smooth then stir in honeycomb flavoring.
Allow filling to cool to a piping consistency, then cut a small hole in the center of each cupcake and dig out
with a spoon. Discard the center and pipe a cone of the chocolate honeycomb filling then place the chopped
honeycomb pieces around the outside.

Melt remaining chocolate over a double boiler, and then drizzle chocolate across the honeycomb to hold in
place.

This is a good cupcake to make if you enjoy honeycomb, if you do not then i dont recommend this cupcake. Also if you dont enjoy things that are really sweet I wouldnt reccomend it because it is really sweet and you probably wont enjoy it as much as someone who loves sweets.

Mochaccino Cupcakes

For The Cupcakes…
  • 5 ½ ounces cake flour
  • 5 ½ ounces super fine sugar
  • 6 ounces unsalted butter softened
  • 3 large lightly beaten eggs
  • 1 teaspoon baking powder
  • 1 tablespoon hot water
  • 2 tablespoons dutched cocoa powder
  • 1 tablespoon granulated coffee

For The Coffee Butter Cream…
  • 6 ounces unsalted butter softened
  • 8 ounces of powdered sugar
  • ½ teaspoon salt
  • 2 teaspoons granulated coffee
  • 2 teaspoons hot water
For The Whipped Cream…
  • ½ cup heavy cream
  • 1 tablespoon sugar
  • 1 teaspoon gelatin
  • 2 teaspoons hot water
  • 1 teaspoon vanilla
For The Topping…
  • Cocoa Powder
Method:

Preheat your oven to 350° F (180° C) and prepare 12 paper cupcake cases in muffin tins.

Place softened butter and sugar into a bowl and cream with an electric mixer until the butter changes
colour. (generally 2 minutes) Add in lightly beaten eggs to the mix a little at a time, beating on slow for 15
seconds between each addition. Add Vanilla then sift in flour and baking powder and mix for a further minute.

Dissolve coffee and cocoa powder in hot water and stir through the batter.
Spoon batter into cases until they are approx 2/3rds full and then place in the middle rack in your preheated
oven. Bake for approx 18 to 20 minutes or until a toothpick comes out clean, then remove and let sit for a
few minutes before removing the cupcakes from the tins and placing them on a wire rack to cool.

To make butter cream icing, add softened butter to a bowl, along with powdered sugar, vanilla and salt.
Dissolve coffee in hot water and add then mix with an electric mixer until light and fluffy.
Cut a small hole in the center of each cupcake and dig out with a spoon. Discard the center and fill hole with
the peppermint butter cream

To make stabilized whipped cream, dissolve the gelatin with the hot water and allow to cool, then beat the
cream with an electric mixer just until traces of the beaters can be seen in the cream, then slowly pour the
cool gelatin mixture into the cream while still beating, then add the vanilla, and beat just until soft peaks
start to form.

Cover the tops of the cool cupcakes with whipped cream and sprinkle with cocoa powder.

The topping is the specialty of this cupcake. it takes some time to make but worth making. Enjoy!

Red Velvet Cupcakes

Ingredients:
2 1/2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons unsweetened cocoa powder
2 oz. red food coloring (two bottles) or 4 oz beet juice (if you use unprocessed light cocoa you can leave out the food dyes and you'll get a warm red/brown color)
1/2 cup unsalted butter, softened
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda



For cupcakes:
Preheat oven to 350 degrees. Line two 12-cup muffin tins or silicone pans with cupcake liners.

Sift together the cake flour, baking powder, and salt into a medium bowl and set aside. In a smaller bowl, mix food coloring and cocoa powder to form a thin paste without lumps and set aside.

In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa paste, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.

In a small bowl, mix vinegar and baking soda. Be careful as it will fizz so don't do it in a shallow bowl. Add vinegar mixture to the cake batter and stir well to combine. Fill cupcake cups with cake batter until they are a little under 3/4 full. I ended up with 20 cupcakes. Place muffin tins in your preheated oven. Bake for approximately 20, rotating pans halfway through. The cupcakes are done when you are able to pat the tops and the cake springs back up. If it sinks down they are not yet complete. Or you can insert a toothpick into the center of a cupcake in the center of the tin and if it comes out clean they are done!

Cool the cupcakes in their tins on a wire rack for 10 minutes then remove and allow to cool completely before frosting.

Overall, enjoy your cupcakes and make them for whatever occasion you wish. These cupcakes are actually quite famous and are really nice to make especially on occasions such as valentines day because they are red and go with the scene of the occasion. Lastly, i know it might be time consuming to bake these cupcakes but in reality they are worth making for your friends and family.

Hummingbird Cupcakes

hummingFor The Cupcakes…
  • 5 ½ ounces cake flour
  • 5 ½ ounces super fine sugar
  • 6 ounces unsalted butter softened
  • 3 large lightly beaten eggs
  • ½ teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 2 ounces mashed ripe bananas
  • 2 ounces grated carrot
  • 2 ounces tinned crushed pineapple
  • 1 tablespoon grated orange zest


For The Cream Cheese Icing…
  • 1 ounce unsalted butter softened
  • 3 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice
For The Topping…
  • 1 Packet of Whole Pecan Nuts
  • 1 Packet of Crushed Pecan Nuts


Preheat your oven to 350° F (180° C) and prepare 12 paper cupcake cases in muffin tins.
Place softened butter and sugar into a bowl and cream with an electric mixer until the butter changes
colour. (generally 2 minutes)

Add in lightly beaten eggs to the mix a little at a time, beating on slow for 15 seconds between each
addition. Add Vanilla then sift in flour and baking powder and mix for a further minute.
Stir in banana, carrot, pineapple and orange zest, then spoon batter into cases until they are approx 2/3rds
full and then place in the middle rack in your preheated oven.

Bake for approx 18 to 20 minutes or until a toothpick comes out clean, then remove and let sit for a few
minutes before removing the cupcakes from the tins and placing them on a wire rack to cool.

To make cream cheese icing, add softened cream cheese and butter to a bowl, along with powdered sugar
and orange juice and mix with an electric mixer until light and fluffy.
Cover cupcakes with cream cheese icing, and then using a piping bag with a start tip pipe a small swirl of
icing in the center of each cake.

Place a single pecan nut on the center of each cake, then chop the remaining pecans and sprinkle around
the outside of each cupcake.

These types of cupcakes are more likely to be preffered by adults rather than children becasue they contain nuts and are not as catchy looking as a princess cupcake. Also make sure that you read the ingredients carefully and make sure you are not allergic to any of the ingredients. Some of the ingredients might be hard to find at stores such as walmart but they should be at grocery stores.

Princess Cupcakes

For The Cupcakes…
  • 5 ½ ounces cake flour
  • 5 ½ ounces super fine sugar
  • 6 ounces unsalted butter softened
  • 3 large lightly beaten eggs
  • ½ teaspoon vanilla essence
  • 1 teaspoon baking powder
For The Butter Cream Icing…
  • 6 ounces unsalted butter softened
  • 8 ounces of powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • Red food coloring

For The Colored Sugar…
  • 2 tablespoons superfine sugar
  • 2 drops of red food coloring

Add in lightly beaten eggs to the mix a little at a time, beating on slow for 15 seconds between each
addition. Add Vanilla then sift in flour and baking powder and mix for a further minute.
Spoon batter into cases until they are approx ½ full and then place in the middle rack in your preheated
oven.

Bake for approx 18 to 20 minutes or until a toothpick comes out clean, then remove and let sit for a few
minutes before removing the cupcakes from the tins and placing them on a wire rack to cool.

To make butter cream icing, add softened butter to a bowl, along with powdered sugar, vanilla and salt. Add
pink food coloring and mix with an electric mixer until light and fluffy.

Fill a piping bag with a star tip and pipe small rosettes on the top of each mini cupcake.

Colour some granulated sugar by placing it in a plastic bag along with a few drops of red food coloring, and
rub through with your fingers, then sprinkle on top of each one.

Lastly go ahead and decorate your cupcakes in any way you want, you can add decorations such as letters or decorations that are found in different stores such as target and walmart. These cupcakes are fun to make for special occasions such as birthday parties and children enjoy seeingh creativity. It is not necessary to add the food coloring but it makes it more creative rather than just having white cupcakes. In addition making your own cupcakes at home is a lot cheaper than going to the store and buying some.

Chocolate Caramel Cupcakes

Ingredients


  • 1 package (18-1/4 ounces) chocolate cake mix
  • 24 caramels
  • 3/4 cup semisweet chocolate chips
  • 1 cup chopped walnuts
  • Chocolate frosting
  • Additional walnuts, optional











Directions

  • Prepare cake mix batter according to package directions for cupcakes. Fill 24 paper-lined muffin cups one-third full; set remaining batter aside. Bake at 350° for 7-8 minutes or until top of cupcake appears set.
  • Gently press a caramel into each cupcake; sprinkle with chocolate chips and walnuts. Top with remaining batter. Bake 15-20 minutes longer or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks to cool completely. Frost with chocolate frosting. Sprinkle with additional nuts if desired. Yield: 2 dozen.

Key Lime Cupcakes

For the cupcakes:
1 cup (2 sticks) sweet butter, softened
1 cup superfine sugar
2 cups self-rising flour
4 eggs
1 tsp. vanilla extract

For filling:
1/3 cup key lime juice
14 oz. can condensed milk

for the meringue:
3 egg whites
1/4 tsp. cream of tartar
1/3 cup granulated sugar




Preheat oven to 350º. Place 18 baking cups in muffin pans. Place all the cupcake ingredients in a large bowl, and beat until smooth and pale, about 2-3 minutes. Spoon the batter into the cups. bake for 20 minutes. Remove pans from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack.

For the filling, combine the lime juice and condensed milk in a small bowl. remove the top from each cupcake and hollow out a small hole. Spoon the filling into the hole and replace the top. For the meringue, beat the eggs and cream of tartar until soft peaks form. Add one third of the sugar and beat for 1 minute. Repeat until all the sugar has been added. Increase oven temperature to 450ºF. Spoon the meringue on top of the cupcakes. Bake for 5 minutes until golden.

This is a harder recipe than most to make because it contains more steps and ingredients but its worth making if you want to try something new.

Applesauce & Cinnamon Cupcakes

1/2 cup (1 stick) sweet butter, softened
1/2 cup plus 1 tbsp. superfine sugar
1 cup self-rising flour
2 eggs
3/4 cup unsweetened applesauce
3/4 tsp cinnamon
1/2 cup (3 1/2 oz.) chopped pecans
1/2 cup (3 1/2 oz.) golden raisins
1 small red eating apple, thinly sliced
2 tbsp. granulated sugar



Preheat the oven to 350F (175C).  Grease a 12-cup muffin pan.  Place the butter, sugar, flour, and egg in a bowl and beat with an electric mixer until smooth and pale, about 2-3 minutes.  Stir in the applesauce, cinnamon, pecans, and raisins.

Spoon the batter into the cups.  Lay the apple slices on top and sprinkle with a little sugar.
Bake for 25 minutes.  Remove pan from the oven and cool for 5 minutes.  Then remove the cupcakes and cool on a rack.  Serve warm.
makes 1 dozen.
This recipe is great for a breakfast snack, because it has fruit and nuts and not too much sugar which is good as a morning start, but It can also just be a snack for anytime of the day. And its not a recipe that necessarily has to be made by a professional baker, its easy to make and doesn't require too much time.

Classic Chocolate Buttercream Cupcakes

Crowd-Pleasing Cupcake Recipes Ingredients:

1 cup (2 sticks) sweet butter
1 cup superfine sugar
1 1/2 cups self- rising flour
1 tsp. baking powder
4 tbsp. Dutch-process cocoa powder
4 eggs
1 tsp. vanilla extract

For the frosting:
  
1 1/2 cups (10 1/2 oz) chopped semisweet chocolate
2 tbsp. heavy cream
1/2 cup (1 stick) sweet butter, softened
1 1/2 cups confectioners' sugar, sifted


Preheat oven to 350º. Place 18 paper cups in muffin pans. Combine all the ingredients in a large bowl and beat with an electric mixer until smooth, about 2-3 minutes. Spoon the batter into the cups. Bake for 20 minutes. Remove pans from oven and cool for 5 minutes. Remove cupcakes and cool on rack. 
For the frosting, put the chocolate, cream, and butter in a pan over low heat. Stir gently until combined. Remove the heat and stir in the confectioners' sugar until the mixture is smooth. Swirl onto the cupcakes. 

This is a great recipe if you are a chocolate lover and enjoy frosting. You can always eat the cupcake without the frosting but the frosting is what makes it perfect. You can make this recipe for any type of party for dessert or just as a sweet snack to give out. Mini Raspberry & Coconut Cupcakes

Ingredients:
3 tbsp. almond cereal
1/2 cup (2 1/2 oz.) flakes coconut
1 1/2 cup confectioners' sugar, sifted
1 1/2 cup all-purpose flour
1 tsp. baking powder
1/2 cup (1 stick) sweet butter, melted
5 egg whites
1 cup fresh or thawed, frozen raspberries
2 tbsp. shredded coconut


Preheat oven to 375º F. Place 24 ceramic baking cups on a cookie sheet. 


In large bowl combine the almond cereal, coconut, confectioners' sugar, flour, and baking powder. Stir in the butter, followed by egg whites.


Spoon the mixture into the cups. Drop a raspberry and shredded coconut on top of each cupcake. Bake for 12 to 15 minutes. Remove the cups from the oven and cool for about 5 minutes. Then remove the cupcakes and cool on a rack. 

Overall these cupcakes are not so hard to make, maybe having the time to go to the store to go get the ingredients takes time but making them wont take longer than 45 minutes. Also, it does not contain a lot of sugar which makes this recipe three times better because its not only good its healthy!

Lemon Butterfly Cupcakes

Ingredients:

1 cup (2 sticks) sweet butter, softened
1 cup superfine sugar
2 cups self-rising flour
1 tsp. baking powder
4 eggs
1 tsp. vanilla extract

For the frosting:

1/2 cup (1 stick) sweet butter
2 cups confectioners' sugar
1 tsp. vanilla extract
1 tbsp. lemon zest



Preheat oven to 350 degrees. Put 18 paper baking cups in muffin pans. Combine all the ingredients for the cupcakes in a bowl and mix until smooth and pale, about 2-3 minutee. Spoon the batter into the baking cups.

Bake for 20min. Remove pans from the oven and let cool for 5 minutes. Then remove the cupcakes from the pan and cool on a rack. Prepare the frosting by beating the butter, confectioners' sugar, vanilla, and lemon zest until smooth. Cut a slice from the top of each cake and cut it into two. Pipe the frosting onto the top of each cupcake then place the half circles of cake at angle on each side of the frosting.

This recipe is good for birthday parties because it gives an entertainment to children as well as adults and they are easy to make. Also, they are healthy and dont contain so much sugar. Have fun making them and enjoying these delicious cupcakes.

Strawberries 'n' Cream Cupcakes

For the cupcakes:
1 cup (2 sticks) sweet butter, softened
1 cup superfine sugar
2 cups self-rising flour
4 eggs
1 tsp. vanilla extract

For the topping:

1 cup heavy cream
4 tbsp. confectioners' sugar sifted
1 tsp. vanilla extract
4 cups sliced strawberries
4 tbsp. strawberry jell-o
1 tbsp. water


Preheat the oven to 350 degrees. Put 18 paper cups in muffin pans. Combine all the cupcake ingredients in a medium bowl mix with an electric mixer until smooth and pale for about 2 to 3 minutes.


Spoon the batter into the cups. Bake for 20 minutes. Remove the pans from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack. For the topping, whisk the cream, confectioners' sugar, and vanilla in a small bowl until soft peaks form. spoon onto the cupcakes and place the sliced strawberries on top. In a small sauce pan heat the jell-o and water until melted. Brush the mixture on top of the strawberries. Chill until ready to serve.

Chocolate Mud Cupcakes


                            1 cup (7oz.) semisweet chocolate chips
1 1/3 cups (2 1/2 sticks) sweet butter
5 eggs
2/3 cup superfine sugar
3/4 cup self-rising flour
2 tbsp. Dutch-process cocoa powder, for dusting


Preheat the oven to 325 degrees. Place 12 paper baking cups in a muffin pan.

In a double boiler, or a medium bowl set over a pan gently simmering water, melt the chocolate and butter together and mix well. Leave to to cool a little.

Beat the eggs and sugar in a large bowl until pale and thick. Fold the flour into the egg mixture and then stir in the melted chocolate and butter until well blended.

Spoon the final mixture into the cups and bake for 20 minutes. The cupcakes will be soft and gooey in texture and appearance. When removing the pan out of the oven let it cool for 5 minutes. Then remove the cupcakes from the pan. Finally serve the cupcakes with cocoa powder.

This recipe is not so hard to make and doesnt need so many ingredients. Following these simple steps you can happily enjoy your chocolate cupcakes with your family or even make for a special occasion. Its a great recipe for a party dessert.

Vanilla cupcakes
